Standard descriptions for ullage levels vary for Bordeaux and Burgundy wines because their bottle shapes differ. For Bordeaux-shaped bottles, ullage is typically described by its position relative to the bottle's shoulder. For Burgundy-shaped bottles, ullage is measured in centimeters from the cork (WineBid, Decanter). The age of the wine is a significant factor in determining whether a particular ullage level is a concern (Decanter).

What storage conditions impact ullage and wine quality?
Storage conditions significantly influence ullage levels and the rate of wine aging. Temperature and humidity matter most. For long-term storage, Dirceu Vianna Junior MW recommends a temperature of around 13-15°C and a humidity level of about 70%. He also wants an absence of light and vibration (Decanter, August 2020). Empirically, wines should be stored at temperatures around 12-16°C (Chanut et al.). Abnormally low fill levels indicate poor storage conditions, specifically high temperature or low humidity (Decanter, August 2020).
Research by Chanut et al. (2023) on microagglomerated cork stoppers in model wine revealed important insights:
- The oxygen diffusion coefficient of the cork stopper alone was not modified over a 24-month period. That held regardless of the presence of model wine, storage position, or temperature.
- The glass-cork interface is a major pathway for oxygen entry into bottled wines.
- At 20°C, the presence of model wine favored oxygen transfer at the glass-cork interface. That accounted for nearly 75% of the total oxygen transfer. The total diffusion coefficient increased from 2.3 × 10−11 to 4.7 × 10−11 m2 s−1 after the initial three months of storage.
- The bottle's storage position can be vertical (cork in contact with vapor phase) or horizontal (cork in contact with liquid phase). Neither position significantly influenced oxygen transfer through the cork or at the glass-cork interface.
- High storage temperatures strongly increase oxygen transfer at the glass-cork interface. At 35°C, barrier properties remained stable for up to 9 months. Beyond this, a significant transfer at the glass-cork interface began to occur. The total oxygen diffusion coefficient increased from 5.2 × 10−11 to 3.5 × 10−8 m2 s−1 at 12 months.
- At 50°C, a tremendous oxygen transfer at the glass-cork interface was observed within the first 3 months of storage. The total diffusion coefficient sat around 1.8 × 10−7 m2 s−1. This phenomenon was further accentuated after 6 months, reaching a value of 7.2 × 10−6 m2 s−1. That approaches the diffusion coefficient of oxygen in the air (2.0 × 10−5 m2 s−1), indicating leakage.
- Two causes could explain this leakage at high temperatures. One is a change in the mechanical properties of the stopper. The other is a partial melting of the paraffin and silicone surface treatment agent. Paraffin melts around 45°C and 64°C. At 35°C, the liquid:solid ratio of the coating was estimated at 19%, increasing to 41% at 50°C.
These findings underscore the importance of consistent, cool storage. Shipping containers, for instance, can experience temperature fluctuations up to 20°C (Chanut et al.). Relative humidity above 50% is required for good elasticity of cork-based closures. Humidity above 80% can increase the risk of mildew formation on the cork's outer surface, according to Chanut et al. What are the risks of excessive oxidation?
Excessive oxygen exposure can lead to oxidation and various wine faults. Those faults significantly impact a wine's sensory profile and value. Some oxygen is beneficial for the aging process. Too much can interact with Acetobacter and begin turning the wine into vinegar.
Oxidation-type faults can manifest in several ways, as described by The Australian Wine Research Institute (AWRI):
- Aroma dulling: A general loss of vibrancy in the wine's bouquet.
- 'Cardboard', 'straw', and 'hay-like' aromas: Common descriptors for oxidized wines.
- 'Sherry-like' and 'madeirised' characters: Indicative of more advanced oxidation.
- Extreme cases: May show 'wet wool', 'wet dog', or 'varnish-like' aromas.
- Acetaldehyde: Can impart odours described as 'over-ripe bruised apples', 'stuck ferment' character, or 'sherry' and 'nut-like' characters when levels exceed 100-125 mg/L (AWRI).
