Is my wine ready to drink? Judging the perfect age

Every published drinking window is a forecast about a bottle that is not yours.
Is my wine ready to drink breaks into three questions. The order matters. What did the critic say, what happened to this particular bottle, and what do you want out of the glass. A Decanter drinking-window guide states the assumption under every printed window: All drinking windows assume ideal storage conditions, under which the chemical process of ageing is carefully controlled. Your bottle has a closure, a format and a storage history. Each of those moves the date. The Australian Wine Research Institute puts the consequence flatly: when a wine is bottled under different closures, different wines begin to be created from that point onwards. Then there is preference. A wine at twelve years and the same wine at thirty are two different drinks. Both answers are correct. Read the window, correct it for the bottle, then pick which version you want.
Who sets a drinking window, and what is it claiming?
A critic who tasted the wine once, usually early in its life, projecting forward. That is the whole mechanism, and knowing it tells you how much weight the dates carry.
Matt Walls is a contributing editor at Decanter. He argues that when you are choosing what to open tonight, the drink-from date is a more important number to look at than the score. The Wine Advocate agrees by implication. It defines its own number as a peak judgement rather than a present one: The score given reflects the quality of the wine at its best. A 98-point note on a young Bordeaux describes a wine you cannot buy the experience of yet.
Vintage charts compress the same judgement down to a region and a year. Christina Pickard, writer-at-large at Wine Enthusiast, calls the chart a really good quick shortcut into, 'Let me just see, was this a good vintage?' and sets the limit in the next breath: Maybe don't remortgage the house based on one thing that we said.
So a window carries three known weaknesses. It comes from one bottle. It assumes storage nobody audited. And it is printed as a hard pair of years for something that behaves like a spread.
Does wine get better with age?
Not all wine is made to age. Even for those that are, successful aging relies on controlled oxygen exposure. Premium wines "reach organoleptic optimum after aging periods ranging from a few months to likely several years or decades," according to Chanut et al.
While "some oxygen is beneficial to the aging process of wine." that "excessive amounts can lead to oxidation and other various wine faults." The Australian Wine Research Institute (AWRI) lists many oxidation-type faults, including "cardboard," "straw," "hay-like," "sherry-like," and madeirised aromas. In extreme cases, a wet wool, "wet dog," or "varnish-like" aroma can be evident. For some styles like sherry, though, oxidation is deliberately encouraged, as the AWRI notes.
The "aging potential of wines is intimately conditioned by storage environmental parameters, particularly the temperature," Chanut et al. states. This means that even a wine with aging potential may not improve if not stored correctly.
How does bottle condition affect the drinking window?
The physical condition of your bottle provides clues about its journey since bottling. That journey directly impacts the wine inside. Ullage, or fill level, is a key indicator.
Ullage is the space between the wine and the bottom of the cork. Dirceu Vianna Junior MW notes in Decanter that "aim for fill levels of 3-10mm at the time of bottling." Over time, some wine is lost through cork absorption and evaporation. Matt Walls, DWWA regional chair for Rhône, told Decanter that ullage is "the best guide you have to the condition of a bottle of wine, especially if you don't know for certain how it's been stored."
Abnormally low fill levels indicate poor storage conditions, specifically high temperature or low humidity, according to Junior. Long-term storage requires a temperature of around 13°-15°C and a humidity level of 70% or so. It also needs an absence of light and vibration, he adds. Wines kept at ambient humidity levels and in temperatures between 50-59 °F (10-15 °C) will experience evaporation and diffusion at a slower rate than wine kept in lesser conditions.
Auction houses and retailers of mature wines pay close attention to ullage levels to determine potential quality and value. A lower fill level means more air in the bottle and an accelerated aging process, according to Wine-Searcher Limited.
Ullage levels for Bordeaux and Burgundy

What happens to wine as it ages?
As wine ages, it undergoes various chemical changes that can improve or degrade its quality. The transfer of oxygen from the outside environment to the wine in the bottle is a key factor in this process, as described by Chanut et al. This research highlights that controlled low oxygen intakes are usually required for wine to evolve and reach its optimal organoleptic characteristics.
However, excessive oxygen can lead to oxidation and other wine faults. The Australian Wine Research Institute (AWRI) identifies several oxidation-type faults, including aromas described as "cardboard," "straw," "hay-like," "sherry-like," or "madeirised." In extreme cases, "wet wool," "wet dog," or varnish-like aromas can develop. Conversely, reductive wine faults can also occur. The AWRI describes them as volatile sulfur compounds with unpleasant aromas like rotten egg gas (hydrogen sulfide), "cabbage," "garlic," "onion," or "rubber" (sulfhydryls).
How does storage affect my wine's aging?
Your wine's storage conditions significantly influence its aging potential and quality. The "aging potential of wines is intimately conditioned by storage environmental parameters, particularly the temperature," according to Chanut et al.
Research by Chanut et al. on microagglomerated cork stoppers (Diam 5 type) in model wine revealed several key findings:
- Temperature: At a storage temperature of 20°C, the oxygen barrier properties of the bottleneck-cork system remained unchanged over 24 months of aging. However, at 35°C, a temperature "easily reached during bottle shipping," total oxygen transfer did not increase significantly for up to 9 months. Beyond this duration of storage, a significant transfer at the glass-cork interface started to occur. At 50°C, this shift occurred within the first 3 months of storage. This increased transfer at higher temperatures could be due to a partial melting of the cork's surface treatment agent. That agent is composed of paraffin and silicone. The other possibility is a modification of the stopper's mechanical properties.
- Storage Position: The study also found that the storage position of the bottle did not have an impact on the oxygen transfer through the bottleneck-cork system. That held for vertical storage (cork in contact with vapor) and horizontal storage (cork in contact with liquid), neither through the cork itself nor at the interface with the glass, over a 24-month aging period at 20°C.
- Presence of Wine: The total oxygen transfer, which includes both transfer through the cork and at the glass-cork interface, was modified by the presence of model wine. The total diffusion coefficient increased from 2.3 × 10⁻¹¹ to 4.7 × 10⁻¹¹ m² s⁻¹ after the initial three months of storage at 20°C. This means the transfer at the glass-cork interface accounted for nearly 70% of the total oxygen transfer in the presence of model wine. This increase could be attributed to the sorption of water and ethanol in the cork, which may favor surface diffusion or modify the cork's mechanical properties.

What about the bottle size?
Bottle size influences the wine-to-air ratio, which affects how quickly a wine ages. Larger formats generally age more slowly than standard bottles. WineBid lists various bottle sizes and their names:

How do I decide when to open my wine?
After considering the general drinking window, your bottle's specific condition, and its storage history, the final decision rests on your personal preference for the wine's development.
Julia Sewell, sommelier at The Fat Duck, notes in Decanter that "is often the age of the wine that will determine whether ullage is of concern." She adds, "most aspects of a wine, the clues can only be confirmed once the wine is tasted, but it's certainly a help in anticipating the condition."
You may be unsure about a bottle with a particularly low fill level. Sewell suggests that in a restaurant setting, "it's a risk that's worth taking, because we are happy to open another bottle if the first is not right." For your personal cellar, this means being prepared for the possibility that a bottle with questionable ullage may not be in optimal condition.
Ultimately, the goal of aging wine is to experience its "optimal organoleptic characteristics," as Chanut et al. describe. This means finding the balance where the wine's flavors, aromas, and textures are at their most expressive for your palate.
