Wine cork mould: when it's normal and when it's not

Wine cork mould is normal, and in a properly humid cellar it is close to expected. A grey or white bloom on the top of the cork or under the capsule grows on the outside of a seal that is still doing its job, so it does not touch the wine. Wine Spectator's Dr Vinny, who has seen a lot of old corks, puts it plainly: "for all the many corks I've seen with a bit of mold, none of the wines have ever been ruined by it." It is also not cork taint. Cork taint is TCA, a compound you cannot see, and the Australian Wine Research Institute notes that wines can carry a TCA taint without any contact with cork at all. What should worry you is mould arriving with company: seepage down the neck, a cork pushed proud of the glass, a stained label under a corroded capsule. That says the seal failed. Mould on its own says the cellar was damp.
Why is there mould on my wine cork?
Because the cellar is damp enough to stop the cork drying out. Wine Spectator states that the safe band is "anywhere between 50 percent and 80 percent humidity", and the theory behind the lower bound is that "dry air will dry out the corks, which would let air into the bottle and spoil the wine." Dr Vinny's own target is "right about 70 percent."
The mould is the price of that protection. Spores like the same conditions the cork needs, which is why Wine Spectator's storage guide states the trade in one line: "extremely damp conditions can promote mold. This won't affect a properly sealed wine, but can damage the labels."
There is a second cause that has nothing to do with your cellar. Dr Vinny explains that bloom on a cork top comes from either "humid cellar conditions, or by a drop of wine left on the cork before the capsule was put in place." That drop was sealed in at the winery, sometimes decades before the bottle reached you, and no storage decision you made had any bearing on it.
Some cellars grow mould deliberately. Zasmidium cellare, the cellar fungus long catalogued as Cladosporium cellare, lives in dark, humid, ethanol-rich cellars across central and southern Europe and feeds on the ethanol coming off barrels as they age. Whether it is there at all is a management choice: some producers feed it leftover wine, others keep the cellar scrubbed. Nobody in either camp treats it as a fault in the bottle.

Is mould on a cork the same as cork taint?
No. They are separate problems, and treating them as one costs people sound bottles. Cork taint is a chemical fault driven mainly by 2,4,6-trichloroanisole, TCA, which the Australian Wine Research Institute describes as having "a distinct musty, mouldy aroma."
Mould is involved in making TCA, which is where the confusion starts. The AWRI describes the chemistry this way: "TCA is generally formed as a result of moulds growing on cork and coming into contact with trichlorophenol."
The precursor is the whole point. Tarasov and colleagues, in a 2022 review of TCA published by IntechOpen, state it without qualification: "Filamentous fungi are widely spread in nature and do not produce TCA without its precursor TCP." No trichlorophenol, no taint, however much bloom you can see. The reverse holds as well. The AWRI records that TCA can form in oak, "and as a result wines can have a TCA taint without any contact with cork."
TCA is also invisible, and it works at concentrations that settle the argument on their own: the AWRI puts the aroma threshold of TCA in a Pinot Noir at 1.4 nanograms per litre, and says some of its own tasters detect it below 1 ng/L. Nothing at that concentration announces itself on the top of a cork.
So the cork tells you about storage. The glass tells you about taint. On how often taint happens the published estimates diverge by an order of magnitude, which is worth knowing before you accept anyone's figure. Wine Spectator reports a Christian Butzke survey of 3,300 wines from the 2008 and 2009 Indy Wine Competition putting noticeable taint under 1 percent, a survey Butzke admits "did not meet the rigors of a scientific study", in the same piece as Wine Spectator's own James Laube finding 7 percent of 2,800 bottles he sampled in 2005 tainted.
When is mould on a cork actually a warning sign?
When wine cork mould arrives alongside evidence that the seal moved. Mould plus seepage, mould plus a cork standing proud of the glass, mould plus a fill lower than the bottle's age explains. Each of those is a different problem wearing the same coat.
Seepage is the one worth learning properly. Dr Vinny defines it as a sign that "at some point (probably because the wine had been exposed to excessive heat)—the wine expanded and pushed itself past the cork", and he ranks the cork faults for you: "I'm most concerned about a cork that has leaked. That usually means that either the cork was loose to begin with and some wine got out (meaning that some air most likely got in), or that it was exposed to heat so much that the wine expanded past the cork."

Fill is the check that settles most of these, and the auction houses have already published the scale. Sotheby's lists top shoulder as the "usual level for wines over 15 years old", high shoulder as a "typical reduction through the cork, usually no problem", and mid shoulder as "usually some deterioration of the cork and therefore some variation." Read the mould against that scale rather than on its own. A mouldy cork on a forty-year-old claret at top shoulder is a cellar note. The same mould at mid shoulder is a cork that has been leaking for years, and on a wine with almost no retail float to check against, like Pétrus, that distinction is most of the price.
Burgundy is measured differently and the difference matters when you are inspecting Romanée-Conti or anything else in a sloping-necked bottle: Sotheby's records the ullage in centimetres from the base of the cork, and states that it "does not indicate levels under 3 cm in the necks of the bottles inspected." What does mould on the label do to the value?
It is priced as a label fault, and it is permanent. The wine is untouched. The paper is not, and paper is what the catalogue grades.
Dr Vinny is blunt about the limit: "once the mold gets onto the label, there's nothing you can do to remove mold from paper." A collector who spots bloom on the capsule and leaves it there for a season has converted a free problem into a priced one.
Auction houses have settled vocabulary for this. WineBid tells bidders its inspectors "may note either a light or heavy label condition issue", covering labels that are "soiled, stained, tissue stained" among a longer list. Brentwood Wine Company lists more specific notes again, carrying one entry for "Signs of mold on label, often associated with a humid cellar" and another for "Water markings resulting in gray outlines, often the result of high humidity in the cellar."
Notice what those definitions are actually telling a bidder. They say the bottle sat somewhere damp, which is neutral to good news for the liquid and bad news for the paper. A buyer who reads "mould on label" as "the wine is spoiled" is mispricing the lot in one direction. A seller who reads it as "cosmetic, ignore it" is mispricing it in the other, because the discount is real even though the fault is not in the bottle.

How do you clean mould off a bottle safely?
Dry first, and never with chlorine. Dr Vinny starts with "a soft brush or a clean soft cloth" and rubbing while dry, allowing that "a little bit of water won't hurt (just make sure you dry it off completely again to not tempt further mold)."
The chlorine rule is chemistry, not fussiness. Dr Vinny's stated reason is that "chlorine is a key component of the “corky” TCA equation", and Tarasov and colleagues list chlorine-containing detergents used to clean the winery among the documented routes by which trichlorophenol reaches wine in the first place. A bleach wipe near a cork is the one cleaning method capable of creating the fault you were worried about. Dr Vinny's stronger option, "diluted rubbing alcohol or vinegar and hot water", does the job without the precursor.
Then open it in this order:
- Wipe the capsule dry with a clean cloth before touching anything else, so nothing transfers to your hands or the rim.
- Cut the capsule below the lip and lift the whole top off rather than leaving a collar.
- Wipe the cork top and the glass rim. This is the step people skip, and it is the only one that stops mould dropping into the wine as the cork comes up.
- Insert the corkscrew and pull.
- Wipe the rim again once the cork is out, before you pour.

If the wine smells musty in the glass rather than on the cork, you have moved from the mould conversation to the taint one. Dr Vinny's test is the same one you would use anyway: "if the wine smells strange before you taste it, by all means avoid it."
What should you do with the bottle now?
Grade it, then decide. Bloom on the cork top is a storage note. Bloom with seepage is a condition problem. Bloom on the label is a price problem. Those are three different bottles and only one of them asks anything of you beyond a cloth.
The checks that settle it are the same five, in the same order, every time.
