Wine Grape Varieties: Red and White Grapes Explained

Thirteen wine grape varieties cover more than a third of the world's vineyard area, and the set that fills a serious cellar is smaller still.
Of the roughly 10,000 grapevine varieties known worldwide, the OIV counts 13 that cover more than one-third of the world's vines and 33 that cover half. The fine-wine market narrows harder still. Among the reds: Cabernet Sauvignon, Merlot, Cabernet Franc, Pinot Noir, Nebbiolo, Sangiovese, Syrah, Tempranillo and Grenache. Among the whites: Chardonnay, Riesling, Sémillon, Sauvignon Blanc and Chenin Blanc. Red and white is a berry-skin distinction rather than a wine-colour one: a black grape makes white wine whenever the juice never sits on its skins. What a variety gives you is structure, the tannin, acid and colour a wine starts with, which sets the outer limit on how long it can be held. What it does not give you is the name on most Old World labels. In Barolo, Burgundy and Champagne the label names the place, and the appellation rules name the grape on your behalf. Read the appellation first, the variety second, the vintage third.
How many wine grape varieties are there?
Around 10,000 are known. The working number is far smaller, and the counts disagree because they count different things.
The OIV states it directly: "Of the world's 10 000 known grapevine varieties, 13 cover more than one-third of the world's vineyard area and 33 varieties cover 50%." The Vitis International Variety Catalogue identifies 21 045 names of varieties, including 12 250 for V. vinifera. The OIV notes that this list "a considerable number of synonyms and most", and estimates the actual number of Vitis vinifera varieties in the world at 6,000. Jancis Robinson, Julia Harding and José Vouillamoz described 1,368 of them in Wine Grapes. Kym Anderson and Signe Nelgen's revised compendium carries bearing-area statistics for 1,705 varieties across 53 countries, comparing 2000, 2010 and 2016. The underlying University of Adelaide database now covers 99% of the world's winegrape area out to 2023.
Ten thousand named. Six thousand real. Fewer than two thousand with measurable plantings. Thirteen that cover a third of the ground.

Those are 2015 areas, from the OIV's most recent variety-by-variety study, and they hold two surprises. The world's most planted grape is a Japanese table variety, first produced by a private breeder named Y. Ohinoue in 1945, and it now grows almost entirely in China. And Spain's largest variety by area is Airén, at 22% of the country's vineyards, and it appears on almost no wine list. The OIV lists it as a white-wine grape that is also distilled into spirit.
Red wine varieties: what the grape does to the bottle
Structure. Every red grape hands the winemaker a different starting point in tannin, colour and acid, and the red wine grapes hub takes each one down to the estates that use it.
Cabernet Sauvignon is the reference point at 341,000 hectares, which the OIV puts at 4% of the world's vineyards and second place behind Kyoho. It is a Bordeaux variety, late-budding with a long maturity period. The OIV describes it as having high tannicity and deep colour while being not particularly round or fat. That is why it is blended rather than bottled alone in its home region, and why the OIV notes it "also has good ageing potential" as the vegetal flavours fade. Yields run between 2 and 14 tonnes per hectare.
Merlot is the other half of that argument: 266,000 hectares across 37 countries, early-budding, early-flowering and prone to over-ripening in warm climates. The OIV describes it as the source of round, structured and deeply coloured wines. On Bordeaux's Right Bank it leads the blend rather than supports it, which is the structural reason Pétrus reads so differently from a Left Bank First Growth on the Bordeaux atlas.
Pinot Noir is the fourth most cultivated variety in the world at 112,000 hectares and the least forgiving. The OIV lists low fertility, small clusters, berries it calls "very small", yields of 3 to 9 tonnes per hectare in Burgundy, and susceptibility to millerandage and coulure when flowering turns cool and damp. The wine it makes is "lightly coloured" with "good potential for ageing in barrels". Scarcity is written into the plant before anyone touches the price, which is a large part of why Romanée-Conti trades where it does.
Syrah covers 190,000 hectares in 31 countries. Garnacha Tinta, or Grenache Noir, covers 163,000, of which 87% sits in France and Spain, and the OIV calls it extremely drought resistant, which is why it anchors the southern Rhône. Tempranillo covers 231,000 hectares but travels badly: 88% of it is in Spain, spread across 17 countries in total.
Nebbiolo is not on the OIV's list of varieties above 100,000 hectares, and that is the point. Its market is one region, defended by law, and the Barolo rules require 100% Nebbiolo.
White wine varieties: acidity is what carries the bottle
Acid does for a white wine what tannin does for a red. The white wine grapes hub covers each variety and the estates that bottle it.
Chardonnay covers 210,000 hectares across 41 countries and is, in the OIV's phrase, "the most international of white Airen wine grape". It buds late, which exposes it to spring frost, and ripens early. The OIV credits it with "good ageing potential" and lists dry, sparkling and dessert styles plus spirits. Bottled alone under the méthode traditionnelle it becomes Blanc de Blancs, which is where the Champagne atlas and the Burgundy one start to overlap.
Sauvignon Blanc covers 123,000 hectares and owes its success, per the OIV, largely to the varietal aromas of thiol compounds (blackcurrant, exotic fruit, boxwood). It is grown in every major wine-producing country, and New Zealand has made it the country's most cultivated variety, at almost 20,500 hectares.
Riesling is the counter-example: a great white grape that stayed at home. The Deutsches Weininstitut reports 24,233 hectares in Germany in 2024, about 45% of the world's Riesling. The Pfalz is the largest single region at roughly 5,926 hectares, and the Rheingau the most concentrated, at almost 78% of its vineyard area.
Trebbiano Toscano, called Ugni Blanc in France, covers 111,000 hectares and much of it never reaches a wine glass. The OIV states that in France it is grown to produce low-alcohol wines of 7 to 9% "distilled into spirits (Cognac and Armagnac". In Italy it is vinified dry and blended to balance out its neutral flavour.
Why does one grape have three different names?
Because varieties travelled before anyone could test them, and each region named what arrived. The names are synonyms, not distinctions, and a buyer who treats them as different grapes misreads the wine.
Syrah is bottled as Shiraz across much of the New World. Tempranillo, on the OIV's own synonym list, is Aragonez and Tinta Roriz in Portugal, Cencibel, Tinta de Toro, Tinto Fino and Ull de Llebre inside Spain, and Valdepeñas in the United States. Grenache Noir is Garnacha in Spain and Cannonau in Italy. Pinot Noir is Spätburgunder and Blauburgunder in German-speaking countries. Trebbiano Toscano is Ugni Blanc.
The most useful case is Zinfandel, because it was settled by testing rather than by tradition. UC Davis geneticist Carole Meredith, working with Ivan Pejić and Edi Maletić of the University of Zagreb, confirmed by DNA profiling in December 2001 that California's Zinfandel and Italy's Primitivo are both the Croatian variety Crljenak Kaštelanski. Meredith's summary opened with one line: "Zinfandel comes from Croatia." She had brought back 150 samples from Croatian vineyards and Dalmatian islands in May 1998, and as UC Davis put it, "none of those was a match". The vines that did match were found two years later.
What did DNA testing change for buyers?
It replaced origin stories with pedigrees, and pedigrees are checkable. Three results are worth carrying around.
Bowers and Meredith reported in Nature Genetics in 1997 that Cabernet Sauvignon is the offspring of Cabernet Franc and Sauvignon Blanc, using 30 microsatellite markers across 51 wine grape varieties. Meredith's own verdict on the pairing: "Although the similarity in names might suggest that Cabernet Sauvignon is connected to these other two varieties, the relationship came as quite a surprise."
Chardonnay came out of the same field. The OIV's summary is that according to genetic research, Chardonnay is the result of crossing Gouais Blanc with Pinot, and that crossings between Pinot Noir and Gouais Blanc have produced 21 grape varieties grown in France. An unfashionable medieval white grape sits behind a large part of the Burgundian repertoire. Syrah has a similar answer: the OIV cites genetic research showing it is the offspring of Mondeuse Blanche from Savoie and Dureza from the Ardèche.
The third result is about mutation rather than crossing. Vezzulli and colleagues showed in the Journal of Experimental Botany in 2012 that Pinot gris and Pinot blanc arose independently from the ancestral Pinot noir, tracing a very large deletion in a single Pinot gris cell layer. Same variety, different berry. When a merchant offers you a rare indigenous variety with a compelling backstory, the pedigree is a matter of published record, and the record is often less romantic than the sales sheet.
Does the label tell you the grape?
In the Old World, usually not, and where it does not, the appellation has already made the decision. Three examples cover most of what a collector buys.
Barolo must be 100% Nebbiolo. The Consorzio also specifies the ageing floor: "at least three years beyond the two months following the harvest", of which one and a half is in oak wood, and "only after five years may it bear the mention “Riserva".
Bourgogne is a two-grape region in practice. The BIVB lists Chardonnay at 57% of the vineyard surface, Pinot Noir at 34%, Aligoté at 6% and everything else, Gamay and Sauvignon and César included, at 3%. It also states the working convention: "In the Bourgogne region, the wines are mainly single varietal." Village, premier cru and grand cru names on the Burgundy atlas are all telling you about place, because the grape is a given.
Champagne names no grape at all on most labels. The Comité Champagne lists Pinot Noir at 38% of the area under vine, Chardonnay at 31% and Meunier at 31%. Five further authorised varieties, Arbane, Petit Meslier, Pinot Gris, Pinot Blanc and Chardonnay Rosé, share 0.3% between them. A bottle of Dom Pérignon tells you the house and the year, and the blend is the house's business.
Which varieties age, and for how long?
The variety sets the plausible range. The vintage, the site and the storage set the actual date, so a variety-level rule of thumb is a starting point and not an answer.
Tannin and acid are the two preservatives, which is why Nebbiolo and Cabernet Sauvignon on one side and Riesling and Chenin Blanc on the other outlast varieties built for early drinking. The OIV credits ageing potential to Cabernet Sauvignon, Chardonnay and Pinot Noir in its descriptions of each. What none of the published sources will give you is the number you actually need, which is the window for one wine in one vintage.

Does the grape variety move the price?
It moves the shape of the market more than the level. Scarcity, classification and producer do most of the work on price, but variety decides how many bottles exist at all, and thin supply behaves differently in a saleroom.
Pinot Noir's yields of 3 to 9 tonnes per hectare in Burgundy are a supply constraint written into the plant. Nebbiolo's market is bounded by a single appellation's rules. Cabernet Sauvignon is grown across nine major countries at once, so its fine-wine tier competes against a deep global base. Those are different liquidity profiles, and they show up in how a lot trades.
The market index tracks the same wines without splitting them by grape, which is the comparison that makes a variety effect visible when there is one.
The permitted list is changing
Two appellations have already added varieties that will never appear on a label, which means the wine in the bottle can change while the name on it does not.
Bordeaux is the larger case. The Institut National de l'Origine et de la Qualité approved six new varieties for the Bordeaux AOC in January 2021: four reds, Arinarnoa, Castets, Marselan and Touriga Nacional, and two whites, Alvarinho and Liliorila. More than 52 varieties were assessed over the preceding decade. The approved six are limited to 5% of the planted vineyard area, cannot account for more than 10% of the final blend of any given color, and under labelling rules will not appear on Bordeaux labels.
Champagne went further in kind if not in scale. On 10 February 2022 the INAO's national committee cleared Voltis, a hybrid carrying resistance to downy and powdery mildew, for use in the appellation under the Variétés d'Intérêt à Fin d'Adaptation framework. The clearance runs to 5% of a grower's area and 10% of a blend, for five years, renewable once. PIWI International states that "Voltis would be the first grape variety resistant to downy and powdery mildew to be included in an AOC* specification."
Neither change is visible on a bottle. Both change what you are buying in vintages from the 2020s onward, which is an argument for tracking the wine rather than the reputation.
Know what the grape is doing to the wine in your glass
Variety tells you how a wine is built. It does not tell you whether this bottling, in this vintage, is drinking better than its reputation or worse, and that gap is where money is made and lost.
